So, if I find copper pans, I can cook with them, or does this tin lining of which you speak have to be intact?

yes, I believe so, if lining isn’t actually deeply pitted or scratched right down to the copper.
I know some serious cooks who swear by these old pans .

Oh, and if you find some great pans with damage, buy them, they can be retinned (not sure if that’s a verb ?)
